Ingredients and Preparation

Creating a delicious double patty chicken burger that helps you stay on track with your weight loss goals might seem like a fantasy, but it’s a reality with this simple, scrumptious recipe. We begin by focusing on the star ingredient: chicken mince. With its high protein content and low fat, chicken mince is the perfect base for a healthy burger.

Start with 1 kilo or 2.2 lbs of chicken mince. If you prefer, you can make your own by blending chicken breasts until they reach a mince-like consistency. This gives you control over quality and lets you avoid any unwanted preservatives.

Season the Mince:

  • Add 2 teaspoons each of onion and garlic powder.
  • Incorporate 1 teaspoon of ground sage or fennel to enhance flavor.
  • Season with salt and pepper (approximately 15 cracks should suffice).

Mix these ingredients thoroughly to ensure an even distribution of flavor throughout the chicken mince. If you’re using a blender for the chicken breasts, simply add these spices directly into the blender for a cohesive mix.

Next, you’ll want to shape your mixture into patties. Aim for 100g per patty, making a total of 10 patties if you’re planning to enjoy double patties. Use cling wrap over your scales to keep things hygienic, and shape the mince into balls before gently pressing them into patties. A useful tip is to keep your hands damp, preventing the mince from sticking to your skin.

Freezing and Prepping

Once you’ve prepped the patties, spread them out on two lined baking trays and place them in the freezer for about 30 to 40 minutes. This step firms them up, making the crumbing process much easier and preventing the patties from falling apart.

While your patties are firming up in the freezer, prepare your lettuce and sauce. You’ll need 250g of any lettuce variety you prefer; iceberg works well. Thinly slice the lettuce into ribbons for a refined finish. Washing the lettuce beforehand ensures it is clean and fresh.

For the Sauce:

  • Chop three cornichons or baby dill pickles. Skip these if they’re not to your taste.
  • Mix ½ cup mayonnaise with 2 teaspoons (or 20g) of yellow mustard, or opt for Dijon for a twist.
  • Add the chopped pickles along with 1 teaspoon each of onion and garlic powder.
  • Season with salt and 10 cracks of black pepper and blend until smooth.
  • Store in the refrigerator until needed.

Egg Wash and Breading Station

For the crumbing process, prepare an egg wash by whisking three eggs in a bowl. This facilitates the breadcrumbs sticking to the patties.

Set up a breading station:

  • Use 120g of plain flour for a light dusting.
  • Opt for 200 to 250g of breadcrumbs, like cornflake crumbs for a crunchy outer layer. Panko breadcrumbs or homemade cornflake crumbs are great alternatives.

Cooking Method

Gently coat each patty in flour, dip in the egg wash, and then cover in breadcrumbs. Ensure every part of each patty is evenly coated. Arrange the patties back onto lined baking trays and add a light spray of oil to promote crispiness.

Bake the patties at 200°C (390°F) for 20 to 22 minutes, flipping them halfway through the baking time. Alternatively, they can be cooked in an air fryer for a lower-fat option.

Assembling Your Burger

Once cooked, these patties are crispy and juicy. Toast five burger buns and spread a generous helping of your homemade sauce on both halves. Top with your freshly baked patties and sliced cheese if desired, then add a handful of your sliced lettuce for crunch.

Storage Tips

These burgers are versatile for meal prep. Store assembled burgers in the fridge for up to three days. Alternatively, freeze the uncooked patties for up to three months. Ensure they are properly thawed in the fridge before cooking.

Enjoy Your Burger

This double patty chicken burger combines the savory satisfaction of a traditional burger with the health-conscious benefits of a balanced meal. The blend of spices, crispiness of the breadcrumb coating, and juiciness of the chicken create a harmonious bite that doesn’t sacrifice flavor for health.

The incorporation of fresh lettuce and tangy sauce adds texture and flavor depth, making each bite a delightful experience. Enjoy the journey and relish the reward of a delicious burger that aligns with your health goals.
